Christmas Cake-Mix Crock-Pot Cookies

Whew, what a mouthful! And I don’t just mean the title…. J

We’ve finally ordered an oven, and it’s supposed to be available for pick-up on Christmas Eve. But I’m not holding my breath, and the children were nearly desperate for some sort of Christmas cookie. So we decided to try a cookie recipe in the crock-pot.

This is a wonderful idea, and not just for those who don’t have an oven. Think about the possibilities for holiday gatherings. You’re busy with the main meat dish, the sides, setting the table, but it sure would be nice to have a warm dessert ready when everyone else is ready. Pop your ingredients in the crock-pot, use a light timer if you need to so it will start at just the right moment, and you’re good to go.

It made the house smell heavenly, and the middle was perfect. But the sides were a tad too hard, and I think I'd opt for the low setting next time around.

Alternatively, you can spread the batter in a 9x13 and pop it in the oven for bar cookies.

1 box cake mix
1 egg
¼ cup vegetable oil
¼ cup buttermilk or sour milk {Make sour milk by mixing ¼ tbsp. white vinegar with ¼ cup milk in a glass measuring cup. Then let it sit for five minutes.}
Christmas M&Ms

To prepare the crock-pot, line it with foil, leaving a tall edge to grip to pull the cookies out when they’re done. Then spray the foil with nonstick cooking spray, making sure to spray the sides as well.

Mix cake mix and oil in large mixing bowl.

Then use the measuring cup to put together the sour milk.

While the milk sours, add egg to the mix and oil. Stir well, approximately 50 strokes.

Add the sour milk. Stir well.

Fold in the M&Ms, however many you prefer. J

Spread the batter evenly in the foil-lined crock-pot. I've read around the web to turn the crock-pot on high and let it bake for two to two and a half hours. Next time, I'm turning it on low so the sides don't get too done.

When it’s done, pull it out by the foil edges. Let it cool before cutting like a pie.

Bon appetit, and have a wonderful Christmas!

  1. My cake mix bar recipe is a little different than that.
